Kyly Whitfield is currently a PhD candidate in the LFS Human Nutrition graduate program doing her research, under the supervision of Dr. Tim Green, in combatting infantile beriberi in rural Cambodia. Infantile beriberi is a disease in babies caused by a lack of thiamin in the diet. If it appears in infants around 2-3 months of age these infants can develop heart failure.
“Through fortification (adding vitamins to foods eaten every day) we can prevent beriberi without asking [Cambonian women] to change a thing. We plan on fortifying fish sauce, a traditional Cambodian condiment that is eaten every day – moms eat the fish sauce and we hope this can improve the thiamin status of their milk and their babies.”
